A classic Chinese vegetarian dish made with tofu skin rolls, braised in a savory soy-based sauce.

Ingredients
- 1 roll “suji” (tofu skin), sliced into thick coins
- 2 slices ginger
- 1 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1 tsp oyster sauce or vegetarian mushroom sauce
- 1 tsp sugar (or rock sugar)
- 1 cup water or stock
- 1 star anise (optional)
- Cooking oil
Directions
- Slice the “suji” (tofu skin) into 1–2 cm thick rounds.
- Pan-fry the slices in oil until both sides are golden brown. Set aside.
- In the same pan, sauté ginger slices briefly.
- Add light soy sauce, dark soy sauce, oyster sauce, sugar, and optional star anise.
- Pour in water or stock to cover the slices halfway.
- Return the fried suji (tofu skin) slices to the pan and simmer for 10–15 minutes on low heat until sauce thickens and absorbs.
- Serve warm with rice or noodles.
