Ingredients
- 300g king oyster mushrooms (cut into thin strips)
- 1.5 tablespoons oyster sauce
- Ginger and garlic, to taste
- 2 small green and red chili peppers
- 1 teaspoon light soy sauce
- 2 stalks of scallions
Instructions
- Prepare all the ingredients. Slice the king oyster mushrooms into thin strips.
- Heat oil in a pan, sauté ginger and garlic until fragrant. Add mushrooms and stir-fry until they soften.
- Add about 1.5 tablespoons of oyster sauce and mix evenly.
- Add a splash of light soy sauce and stir well.
- Toss in chopped chili peppers and stir-fry briefly.
- Just before serving, sprinkle with chopped scallions and plate.
Tips
- Oyster sauce is quite salty, so there’s usually no need to add extra salt.
- If you don’t eat spicy food, feel free to skip the chilies or substitute with bell peppers for color.
