  1. Prepare all the ingredients. Slice the king oyster mushrooms into thin strips.
  2. Heat oil in a pan, sauté ginger and garlic until fragrant. Add mushrooms and stir-fry until they soften.
  3. Add about 1.5 tablespoons of oyster sauce and mix evenly.
  4. Add a splash of light soy sauce and stir well.
  5. Toss in chopped chili peppers and stir-fry briefly.
  6. Just before serving, sprinkle with chopped scallions and plate.
